How to Make Effortless Sourdough Crepes

One thing I love about sourdough is the many different things I can make with it. A few staple recipes are often a part of our weekly menu that incorporate our useful sourdough starter. One that has become a more recent favorite in our home is sourdough crepes.

They are not the same as the crepes I have had in the past, but they are delicious nonetheless. This recipe also includes a lot of eggs which is another thing we LOVE about it.

Sourdough Crepes: A Delightful and Versatile Alternative to Pancakes

Crepes are similar to pancakes in their thin, light texture, and can be topped with anything you would put on a pancake. However, their versatility is what sets them apart. Sweet or savory, crepes can be served in countless ways.

You can enjoy them like pancakes, accompanied by syrup and sides. One of our favorite ways to eat them is with Berry Compote and some homemade whipped topping.

For a decadent dessert, try them with homemade hot fudge and ice cream, or experiment with various fruit, chocolate, whipped toppings, syrups, sauces, and fillings of your choice.

The savory options are equally delicious, with meat and cheese being a popular choice, along with other sandwich or wrap toppings.

Whether you prefer sweet or savory, crepes offer endless possibilities for customization. Here are a few ideas to try:

  • Sweet: berry compote with whipped topping, Nutella and bananas, strawberries and whipped cream, lemon and sugar, apple cinnamon, or even s’mores with chocolate and marshmallows.
  • Savory: Ham and cheese, spinach and feta, bacon and eggs, smoked salmon and cream cheese, or roasted vegetables with goat cheese.

No matter how you choose to enjoy them, crepes are a delightful alternative to pancakes that are sure to impress your taste buds.

How We Make Our Delicious Berry Compote and Whipped Topping

  • Our Berry Compote recipe is super simple – just heat up some fresh or frozen fruit on a saucepan and mash it until it’s warm. We don’t usually add anything else besides a little sweetener occasionally, but the whipped topping usually provides the perfect amount of sweetness.
  • As for the whipped topping, we have our boys whip a couple of cups of heavy cream until it forms stiff peaks. Then, they’ll add 3-4 tablespoons of powdered sugar or maple syrup for sweetness. A splash of vanilla is also added for extra flavor.

Sourdough Crepes Recipe

Sourdough Crepes are not only tasty, but they are one of the easiest and quickest things to make. Just a few simple ingredients and you are on your way to making a perfect breakfast for your family.

The ingredients needed for sourdough crepes include:

  • sourdough starter (either fed or discard)
  • eggs
  • milk
  • butter
  • salt

The method to making sourdough crepes:

It is a simple process. The hardest part is cooking the crepes, and that is just something that will come with practice.

All you do is whip all your ingredients together in a bowl.

Next, use a ladle or measuring cup to pour your mixture onto a heated skillet.

Now you will spread the batter onto the skillet. There are several ways to accomplish this step. Here are some ideas on how you can do this:

OPTION 1:

  • My favorite way is to lift the handle of the pan and tilt it around encouraging the batter to spread in a thin circle around the skillet. This method makes a large crepe with our pans, but I like that they are spread out evenly and are nice and thin.

OPTION 2:

  • You could also use a regular spatula to spread it around. The only thing I don’t like about this method is that it is difficult to spread the batter out evenly. If that doesn’t matter to you, then it is a perfect method to use.

OPTION 3:

  • The last option, and one that might offer the best results would be to purchase a crepe spreader. I have not personally used one, nor do I believe they are absolutely necessary unless you are super serious about this crepe making idea. Crepe spreaders can be found here if you want to try them out.

Allow the sourdough crepes to cook on each side on a medium to medium low heat for about a minute. Carefully flip them over and cook about a minute on the other side.

Remove the sourdough crepes from the skillet and top or fill with your favorite things.

Sourdough Crepes

These sourdough crepes are not only tasty, but with minimal ingredients, it can be whipped up and ready in no time at all.

Ingredients

  • 1 cup Sourdough Starter or Discard
  • 12 Eggs
  • 1/2 cup Milk
  • 4 tablespoons Butter
  • 1/4 teaspoon Salt

Instructions

  1. Whisk the eggs.
  2. Add the other ingredients and whisk together.
  3. Using a ladle or a measuring cup, pour batter onto a preheated skillet.
  4. Spread the batter evenly in the pan. (See below for ideas to do this)
  5. Allow the crepes to cook on each side for about a minute on a medium to medium-low heat.
  6. Remove from the pan and enjoy with any toppings or fillings you choose.

SPREADING THE BATTER IDEAS:

  • Use a spatula to spread evenly in the pan.
  • Lift the skillet by the handle and twirl the pan around to spread the batter evenly around.
  • Use a crepe spreader.
