The Best and Fluffiest Sourdough Pancakes

Sunday is pancake day in our house and these sourdough pancakes are my daughter’s absolute “fravorites”! We all love them, although she especially loves my accidental misreading of the recipe which led to a slight crispiness to the pancake. I actually made them that way until recently, after discovering my mistake. However, both ways are delicious!
If you’re looking for an easy and delicious start to your day, these fluffy sourdough pancakes are your answer.
I have made a couple of sourdough pancake recipes and thought I should probably just stick with my mom’s buttermilk pancakes (which we still keep in the rotation because…yum!) until I tried this one that one of my sisters sent me and the search is now over.
Added bonus: they also make great waffles!

You will need:
- Large Mixing Bowl
- Whisk
- Kitchen Scale (optional)
- Sourdough Starter
- Sugar
- Eggs
- Oil
- Salt
- Baking Soda
- Griddle, Skillet (I prefer cast iron), or Waffle Iron
- Water
Step-by-Step Instructions for Making Sourdough Pancakes:
- In a large mixing bowl, combine the sourdough starter, sugar, egg, oil and salt until combined.
- Wait until right before you begin putting your batter on the griddle before adding the baking soda and be sure to dilute it with 1 teaspoon of water and fold it in gently. You will see the bubbles form and the batter to expand quite a bit (add the teaspoon of baking soda without diluting it for the accidental crispy version that we also enjoy).
- Cook your pancakes on griddle at about 350 degrees until golden brown on each side.
- Enjoy these pancakes with your favorite toppings.

One of the greatest things about pancakes is that there are so many varieties to choose from to add to their deliciousness. These are just a few of our favorites:
- Homemade buttermilk syrup
- Homemade Greek yogurt with a layer of applesauce and topped with hemp hearts (my personal favorite!)
- Peanut butter and maple syrup
- Fruit and whipped topping (fresh or frozen fruit work!)
- Jam/jelly

Sourdough Pancakes
The best sourdough pancakes!
Ingredients
- 2 cups sourdough starter - 500g
- 2 tablespoons sugar - 25g
- 1 egg
- 4 tablespoons oil - 72g
- 1/2 teaspoon salt - 3g
- 1 teaspoon baking soda
Instructions
1. Combine the starter, sugar, egg, oil and salt.
3. Right before you begin cooking your pancakes, add 1 teaspoon of baking soda diluted with 1 tablespoon of warm water and gently combine. The batter will bubble and increase in size.
4. Cook pancakes on griddle at about 350 degrees until golden brown and enjoy!
Notes
If you don't dilute the baking soda, the batter will not be fluffy, but have a slight crisp to it, which is also really yummy and a nice way to mix it up.
